Todos Santos is a group of 276 women coffee farmers known as “Mujeres luchando por un mejor futuro”, or Women Fighting for a Better Future. These farmers are growing outstanding organic coffee in the remote highlands of Huehuetenango. We taste s’mores, nougat, and a hint of dried fig or dried berries in this medium roast. This is an ideal coffee if you don’t like the bitterness of darker roasts but also don’t want a particularly fruit-forward flavor profile.

Why We Love This Coffee
This coffee has a unique story. Men in Guatemala often leave their families to work in the USA, leaving the women to both raise their children and run the coffee farms! A decade ago, the women in Huehuetenango started banding together to improve all of their lives, and the Todos Santos collective was born. What’s happened since then? Their export partner provided an expert agronomist for consultation and continuing community education on varietal cultivation, nursery care, fertilization and soil health, and processing. Onyx, our import partner, visited them, ran brewing classes, and helped them get a better understanding of what American coffee roasters want.
This added knowledge, combined with slow cherry maturation (thanks to the cool, cloudy climate) gives results in the cup that speak for themselves. We taste s’mores, nougat, and a hint of dried fig or dried berries. Try immersion brewing like French Press, AeroPress, Clever, or Switch to emphasize the chocolate and sugar-browning notes, or percolation brewing such as V60, Chemex, Kalita, or auto-drip machine to bring out the hints of fruit a bit more.
